Terrence Talbot of Karelia talks about the Mac OS X Services menu, and Rixsteps' insane ACP services menu which adds hundreds of items to it.
Followed, in the comments, with a link to the Services Manager prefpane, which I use.
Sadly, it's a nasty hack to fix the problem.
See, each app defines its services locally (in Info.plist, iirc) and then the Services menu builds the list by examining them. (I'm not entirely sure of the registration process, but it may well be at login.)
To take an item out of the menu, you have to grub about within the bundle, edit a file you're not meant to edit, then save it. Then log out to see the change take effect.
Of course, if you upgrade the app, bang, the service is back.
I hates it, I do. I also wonder if Spotlight importers are going to have similar problems, given they are also defined per-app in the Info.plist.
