Unlike Vizacast, it's reasonably priced (can't get much better than free), has a clear, usable GUI and generally gives off a lovely whiff of flowers.
As opposed to the whiff of something unmentionable.
The only problem is that it uses Core Data, meaning it doesn't work on Mac OS X 10.3. Oh well. From what I hear about how easy it is to build stuff against, I can forgive that.
There's also Join Together, an AppleScript that can be used to make "gapless" AACs from a bunch of MP3s. Might be useful.
There's also an Export as XML Chapters script that can be used if you're starting from a CD.

I see 1.4 (and in fact every version since 1.1) has worked with 10.3 as well as 10.4. Thumbs up!
