Usually I'm not that bothered about apps that let you copy tracks off an iPod; it's not a problem that's come up for me and I know enough about manipulating the Finder to make it show the hidden files.
This, though, looks impressive (I haven't tried it yet); it makes the iPod available as a (read only) mount point (although he calls it a file share; very sensible).
That means you can use the Finder (or Terminal) to find which tracks you want (or all of them!) and copy them across.
Even nicer, it's GPLed, and so I might be able to make it run on 10.3, despite the fact that's not supported.
